PROJECT PURPOSE

Developing a Meat Fabrication and Processing Laboratory in our Agricultural Education Facility will allow students to receive training to enter the workforce in an area that the Pandemic revealed is in high demand. We would be able to utilize existing structures on the Central High Public Schools Campus but are requesting funds to purchase equipment.

EVIDENCE

The agricultural industry is constantly evolving. As it becomes more technologically advanced, we are still going to need people trained in trades and skills throughout our life. The meat industry is in need of meat processors at all levels, this program could help train students and alleviate some of that need.


POPULATION DESCRIPTION

Grocery and retails stores throughout the Pandemic and through the aftermath have been struggling to find training meat cutters to offer products to costumers. Packing houses and processing facility are having difficulty finding employees to harvest meat for private customers. Most of these facility have a year long waiting list due to not being able to harvest and process fast enough to meet the demand of the communities. Training more meat cutters and processors could ease those burdens.

PERFORMANCE MEASURING

The objective is to have Secondary Education Students receive training and certification in Meat Fabrication. We will utilize the curriculum set in place by the Oklahoma Department of Career Tech.
