PROJECT PURPOSE
The purposes of our grant application are threefold: to increase North Tulsans? interest in enhancing their entrepreneurial orientation and business expertise, knowledge of nutrition, and preparation of healthy soul food. Initially, the Greenwood Center will survey North Tulsans to identify those currently offering catering services to our community or even cooking for their families as well as those who want to feed North Tulsans. Ultimately the funds will be used to upgrade and renovate 3,500 square feet space to be used as a community commercial kitchen and assembly hall for North Tulsa County community.

POPULATION DESCRIPTION
Not only is Tulsa North considered a food dessert, but it is an area full of health disparities. This community was venerable before the pandemic, but it is in worse shape since the pandemic began in March 2020. To increase North Tulsans? interest in enhancing their entrepreneurial orientation and business expertise, knowledge of nutrition, and preparation of healthy soul food will empower the North Tulsa community and other neighborhoods across Tulsa.
PERFORMANCE MEASURING
Our survey will be prepared by experts at Oklahoma State University who have generously agreed to donate their time to our efforts. We will utilize a snowball sample to evaluate those who offer catering services to our community or who are interested in enhancing their cooking skills. Such attitudes as their beliefs about what foods are healthy will be compiled and used to develop cooking instruction classes led by Katelynn Dunning, head of Kitchen 66, who brings to our work years of cooking class instruction with the purpose in mind to promote healthy food consumption.
